Smitten Kitchen Red kidney bean curry and A News

I hope you have heard about Smitten Kitchen(click on this to go to the recipe index page). It has awesome recipes. More than often you can find recipes which are very easy to make even if you are a novice at cooking like I am and the site is very easy to navigate. My best friend suggested this blog since for some reason even if I am a foodie I never looked for a food blog. The reason is that I am too lazy to follow through complicated recipes.
But here is the simple and extremely delicious recipe of red kidney bean curry or as we Indians call it "rajmah".I followed this recipe(click link for photos and details of the various stages). I have been thinking of sharing this recipe on my blog.
Brief summary of how I adapt the recipe(for details head over to the page link on her blog shared above)
  • Heat olive oil in a deep pan.
  • Add grated ginger in the heated oil. This is what flavours the curry.
  • After a minute add chopped onions,garlic,diced tomatoes(with the seeds and juice),green chili chopped(1 or 2 depending on how hot you want it)
  • Add cumin powder,coriander powder,turmeric powder,red chili powder
  • Add salt to taste and reduce this a bit. Cook for 5-6mins till the fragrance of the spices hit your nose.
  • Add tomato sauce
  • Add the boiled rajma(along with the water it was boiled in)
  • Add another cup of water and boiled it.
  • Cook for 10 more mins.
And you are ready to serve.Serve it with roti,rice,bread,parantha.Sometimes I have it without anything else.
